A little bonus post. More Crock Pot! Hawaiian Chicken
I can’t believe I left this out of my favorite Crock Pot recipes post last week! This stuff is great!
Crock Pot Hawaiian Chicken:
2-3 lbs boneless skinless chicken breasts
1 (16 ounce) can pineapple slices, drained
1 (15 ounce) can mandarin oranges, drained
1/4 cup cornstarch
1/4 cup brown sugar
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
Directions
1 Combine all ingredients in the crock pot.
2 Stir well.
3 Cover and cook for 4-5 hours on low or 2-3 hours on high
4 Serve with steamed rice.
I cooked it for 2:45 on high, and it was a bit too dry. However, I then shredded the chicken and stirred it in the sauce, and that was AWESOME mixed with cooked brown rice.
FYI – I mixed all ingredients first and then added the chicken. It is not very soupy, which surprised me, but plenty of juice to coat the chicken. The oranges kind of dissolved adding to the juice.

Do you know if kids will eat this dish? My kids hate nearly everything I prepare for dinner.

Both of my girls are really picky – one will eat it, and the other will sometimes. If I show her all the sweet things that go in it, the oranges, brown sugar, etc. she is more likely to eat it.
